The quality of this cheese is amazing. However, the production and consequent availability is very limited. It is produced by a number of cheese dairies in the province of Reggio Emilia from the milk of the “red” Friesian breed of cattle, hence the name. “Red Cow” is ripened for at least one year and has a grainy, hard texture with a dry and intense flavor. Excellent when served with big, mouth-filling red wines, good bread and fresh fruit.

Cheese will be shipped to be delivered no later than Friday of the current week. If transit time extends over the weekend or no shipping holiday we will hold to ship when appropriate.
