Mushroom Soup

Healthful concoction made using dried Porcini mushrooms.

  • 15 Dried, Porcini *
  • Mushroom soaking liquid
  • 5 cups Vegetable stock
  • 1 teaspoon Green peppercorn, freshly ground *


  1. Soak dried mushrooms.
  2. Reserve soaking liquid.
  3. Cut in half.
  4. Place mushrooms in a deep, heatproof bowl. 
  5. In a saucepan, bring mushroom-soaking liquid and vegetable stock to a boil.
  6. Pour over mushrooms.
  7. Place bowl in a large pot, surround the bowl with boiling water to about 2/3 its height.
  8. Cover with a lid, steam over low heat for 1 hour.
  9. Replenish the boiling water with more of the same, as necessary.
