Southwestern breakfast favorite.

  • 3 Corn tortillas, cut into strips
  • 3 tablespoons Olive Oil *
  • 1 Pickled jalapeno pepper, seeded and chopped
  • 3 tablespoons Purple onion, chopped
  • 4 Large eggs, slightly beaten
  • Salt to taste *
  • 1/4 cup Grated Monterrey Jack cheese
  • A few leaves of fresh cilantro


  1. Heat oil in cast iron skillet and fry tortilla strips until lightly crisped.
  2. Remove tortilla strips, set aside and pour off half the oil.
  3. Return skillet to heat and add Jalepeno and onion.
  4. Stir and cook for half a minute and add eggs, salt and fried totilla strips.
  5. Stir the migas until the eggs are set.
  6. Serve sprinkled with the cheese and cilantro.
