Delicate, light and airy.  Fun and easy to make.  In French they are called oeufs a la neige or snow eggs.

  • 2 Egg whites
  • 1 Dash fine sea salt *
  • 1/4 cup Sugar
  • 3 cups Skim milk


  1. Seperate yolks from whites and reserve yolks for another purpose. Beat egg whites with dash of salt until soft peaks form.
  2. Gradually add sugar, 1 tablespoon at a time; beat well after each addition until stiff peaks form.
  3. In a frying pan, simmer milk; drop 6 mounds of meringue in water.
  4. Cook slowly, about 5 minutes or until meringues are set; with spatula remove from pan and drain on towels.
