Il Borgo del Balsamico was born from an ancient family passion for producing Black Balsamic Vinegar (Traditional Balsamic Vinegar of Reggio Emilia). 


For over 40 years, the Crotti family developed black balsamic for themselves and close friends—a passion they share for all traditional, high quality products of their land. Over the years, the Crotti family has transformed their passion into a thriving business.


A few years ago, they decided to promote their traditional products, and added additional high quality products for everyday use. For their “Condiment’s Line”, they chose the classic Italian balsamic vinegar color code (Yellow, Orange, or Red) to distinguish the three types, based on usage, to help consumers choose the right condiment for their recipes.


Their goal is satisfy the needs of refined Gourmets that are looking for traditional products with a modern and elegant feel.


Il Borgo del Balsamico is a woman-owned company, with a high sensibility for aesthetics, enormous attention to detail, and always on a quest for the highest quality.



The two sisters who manage the company, Cristina and Silvia Crotti, complement each other's roles and skills with great passion for their work and products. After they received Business Administration degrees, they worked in the family company, a ready-to-wear (prêt-à-porter) female fashion business. Later, they decided to establish Il Borgo del Balsamico—a big challenge in an unknown market. Today, they have successfully integrated their individual visions, attention to detail, and expertise from "other worlds" with their products.


Using the old family recipe, their Acetaia currently produces three types of ”Traditional Balsamic Vinegar of Reggio Emilia" in Orange, Silver and Gold labels.


The three “il Borgo“ condiments, and three types of Balsamic Vinegar of Modena (Yellow, Orange and Red) are produced in a “Barricaia”, using 600 barrels made of French Durmast Oak, dating from the 18th and 19th centuries.


All products are artisanally-produced, with absolutely original packaging.


I met Cristina and  Silvia during my trip through the land of Italian balsamic vinegars (Modena and Reggio Emilia provinces). I was fascinated by these two sisters, young but with a deep knowledge of balsamic vinegars.  Their Traditional Balsamic Vinegar is produced on a real family Acetaia, and I was very impressed with their passion about their products.



After visiting 65 different Balsamic Vinegar producers, I decided that il Borgo del Balsamico products were the right quality for Avanti Savoia.



FAQ: What is an "acetaia"?

An "acetaia" is the place where barrels, often hundreds of years old, filled with balsamic vinegar are left to age. Typically, the barrels are located in a loft, or attic where the windows are left open, with screens to keep out insects. The seasonal hot summer/cold winter temperature cycles help the traditional balsamic vinegar to develop its distinctive flavor.
