Preparation:
Add 2 cups of boiling water for each cup of couscous. Cover pot and simmer simmer 8-10 minutes, stirring occasionally. Salt to taste.

I like it so much better than the teeny, tiny stuff you can get in any grocery store. More versatile to cool with and satisfying as a vegetarian meal. Making fried, herbed couscous cakes tonight! (Serve with lemon or lime wedges.)
