Chicken"Hunter's" Style (Pollo alla Cacciatoria)

Vito's favorite stewed chicken and mushroom dish from Italy.
Ingredients

- 2 1/2 pounds Chicken cut into pieces
- 2 tablespoons Extra Virgin Olive Oil *
- 1/2 cup Onion, chopped

2 1/2 cups Tomato sauce, pulped

- 1 cup Dry white wine

1/2 cup Galletti mushrooms

1 teaspoon Seasoned salt

Instructions
- Put Extra Virgin Olive Oil, chicken pieces, and onions in a frying pan and let all the ingredients fry lightly over a mediun heat, stirring often.
- Pour in the dry white wine, and let it evaporate for about 5 minutes.
- Add pulped tomato sauce, season with seasoned salt, and green peppercorn and stir.
- Turn down to low heat and keep on cooking for about 30 minutes; or until the sauce is retired, stirring occasionally.
- Add “Galletti” mushrooms, mix well, and cook for 5 minutes more.
- Serve the chicken warm, covered with its cooking juice with slices of loaf bread or with a thick slice of Polenta ( see recipe for Basic Polenta in Avanti Savoia Grains).
