Pecorino Romano DOP (Roman Sheep’s Cheese)

This historical cheese was carried by Roman Legionaries on their campaigns and has been mentioned in literature for at least two thousand years. Today Pecorino Romano is produced mostly in Sardinia. The cheese is best known grated over pasta dishes, although it is also an excellent table cheese. Aromatic, sharp, salty and crumbly, it is a wonderful companion to robust Italian honey, figs and full bodied red wine.
