Stir-Fried Pork with Bok Choy and Bell Pepper

  • 1/2 pound Lean pork
  • 2 cups Bok Choy, shredded
  • 2 Green bell peppers
  • 1 cup Red onion
  • 2 Slices of fresh ginger root
  • 1 tablespoon Soy sauce
  • 1 teaspoon Sugar
  • 1/2 teaspoon Fine sea salt *
  • 3 tablespoons Extra Virgin Olive Oil *


  1. Dice pork,  green bell pepper and onion.
  2. Mince ginger root, then combine with soy sauce, sugar and salt. 
  3. Heat Extra Virgin Olive Oil in a wok pan.
  4. Add pork and stir-fry until golden (about 3 to 4 minutes).
  5. Add onion and stir-fry ½ minute.
  6. Add bell pepper; stir-fry 1 minute more.
  7. Add shredded bok choy; stir-fry 1 minute more.
  8. Add ginger-soy mixture and stir-fry to blend flavors ( 1 to 2 minutes more).
  9. Serve at once.
