Herbed Olives and Onion Marinade

Wonderful recipe to flavor olives. Great snack with cheese, bread and a glass of wine.

- 1 pound Black Olives, unpitted and rinsed of any brine under cold running water
2 Tablespoons Red Wine Vinegar
Claudio Rosso suggested
2 Tablespoons Honey Vinegar
Ramo d'Oro suggested
- 1/2 cup Extra Virgin Olive Oil *
- 4 ounces Cocktail Onions
- 2 Tarragon Sprigs
- 2 Parsley Sprigs
1/2 teaspoon Sea Salt with Aromatic Juniper Berries
- In a large clean glass jar with lid, combine olives, vinegars, olive oil, cocktail onions, tarragon sprigs, parsley sprigs and salt. Shake well.
- Marinate at room temperature - shaking jar occasionally - for 24 hours. Serve immediately with a little of the marinade and the onions, and the parlsey sprigs for garnish.
Note: The marinade can be stored up to 6 months in the refrigerator.
