This precious green tea from Japan features an almost grassy flavor.

The production of this tea is an exacting, precise process. First the leaves are steamed for 15 to 45 seconds to prevent oxidation, then the leaves are rolled, shaped and dried. This step gives them the customary thin cylindrical shape.

Finally after drying the leaves are roasted to aid in thier preservation and to add additional flavor.

This green tea goes well with seafood and is brilliant with chocolate.

This light green tea is consumed hot during the winter and chilled on ice in the summer, making it a good year-round selection.

Time of infusion: 3 to 4 minutes at 160 to 180 degrees.
