Lovely flavor, I've used several bottles. Very good in summer salads. Also great to finish black bean soup.

The New York Times had a recipe for salted cabbage and suggested sherry vinegar. The "Minimalist" said it is crisp and refreshing. He is right. The salted cabbage was terrific and so is the salad dressing I made with it. Very pleased with this lighter than balsamic but equally tasty vinegar.
