Very straight forward classic French dressing (no sugar, of course).

  • 1/4 cup Good quality wine vinegar or flavored vinegar *
  • Juice of 1/2 lemon
  • 1/2 teaspoon Dry mustard
  • 1/2 teaspoon Salt *
  • 1/2 teaspoon Black pepper *
  • 1/2-3/4 cup Good quality Extra Virgin Olive Oil *
  • 2 tablespoons Each of finely chopped fresh chives and basil (optional)


  1. Make the dressing directly into the salad bowl that will be used to serve the salad.
  2. Beat together well, the vinegar, lemon juice, mustard, salt and black pepper.
  3. Next beat in the olive oil a little bit at a time.
  4. Stir in chives and basil and taste for seasoning.
