Derravaragh Salmon Trout Steak

Very easy and non-fussy recipe from Lough Derravaragh (Lake Derravaragh) in Ireland. Salmon Trout are large members of the trout family, also know as Steelhead trout. Any Salmon steak will work just fine.
Ingredients

- 4 Salmon Trout Steaks, about 1 inch thick and 4 inches in diameter - 3 1/2 pound total weight
- Fine Sea Salt (Juniper spiced suggested) and Fresh Ground Green Peppercorn, to taste *
- 1/2 Onion, finely chopped
- 1/2 cup White Mushrooms, finely sliced
- 1 Tablespoon Parsley, finely chopped
- 2 Tablespoons Fresh Dill, chopped
- 4 Tablespoons Butter
Instructions
- Arrange steaks on 4 pieces of foil, large enough to envelope and seal the steaks.
- Season with salt and pepper.
- Place 1/4 of onion, mushrooms, parlsey and dill on each steak, dot with 1 tablespoon of butter.
- Pull in the edges of the foil and fold over to make a sealed parcel.
- Arrange in an ovenproof plate and bake at 325 F for 25 to 30 minutes. Serve at once.
