Turkey "Fried" Rice

Low fat and low sodium, but still loaded with taste.

  • 1 1/4 cups Water
  • 1 1/2 cups Uncooked instant brown rice *
  • 1 Tablespoon Margarine
  • 2 Tablespoons 62% less sodium soy sauce
  • 2 cups Chopped cooked turkey
  • 1/2 cup Frozen peas
  • 1/2 cup Coarsely shredded carrot
  • 1/4 cup Sliced green onions
  • 1/4 cup Coarsely chopped green pepper
  • 1/4 cup Egg substitute


  1. Bring water to boil in a saucepan; stir in rice.
  2. Cook rice according to package directions, omitting salt and fat.
  3. Cover and set aside.
  4. Melt margarine in a medium saucepan over low heat; stir in soy sauce.
  5. Add turkey; cover and cook for 5 minutes.
  6. Add peas and next 3 ingredients.
  7. Saute' 3 minutes over medium heat.
  8. Stir in egg substitute and cook 1 minute or until egg is done, stirring constantly.
  9. Combine rice, and turkey mixture; stir well.
  10. Serve warm.
