The flavor of curry is one of the foundations of Indian cooking. All Indian cooks have their own favorite recipes that are used to give their own “personality” to every dish.

This Curry Powder Special is a well balanced mixture of mustard seeds, black pepper, coriander, turmeric, caraway seeds, chilli, fenugreek, celery seeds, nutmeg, cinnamon, anise seeds, mace (the outer covering of the nutmeg), cloves, fennel seeds, sage and ginger.

All these components are wood fire toasted and then finely ground. This is the standard curry flavor found in so many restaurants outside of India.
