Quick, healthy dish for the fresh squash lover.

Ingredients

  • 2 cups Sliced Patty Pan squash
  • 1 Medium Yellow Crookneck or Straightneck squash

    Cut into 2x1/2-inch spears (1 cup)

  • 1 Medium Zucchini

    Cut into 2x1/2-inch spears (1 cup)

  • 1 Tablespoon Margarine
  • 1 teaspoon Dried rosemary leaves, crushed *
  • 2 teaspoons Fresh lemon juice
  • 1/4 teaspoon Salt *

Instructions

  1. Combine all ingredients in a 2-quart, microwave safe casserole
  2. Mix well and cover.
  3. Microwave at High for 6 to 10, or until all vegetables are tender-crisp, stirring twice.
  4. Let stand, covered for 3 minutes.
  5. Serve with slotted spoon.
