The variety of olives used by Geraci, the Nocellara Belice and the traditional processing methods result in black olives that are very authentic in taste, texture and aroma.

Geraci uses only all natural methods to create their olives.

The process begins with a soaking in brine to remove the bitterness and then about a week of air drying to darken the color.

The results are a black olive that is only a few shades darker than their green olives but with a distinctively rich flavor.
