Procedure to render stock or consomme crystal clear.
Ingredients

- 3 Lightly beaten egg whites and broken egg shells
- 1 1/2 cups Shredded lettuce
- 2 Green onions, finely chopped
Instructions
- Separate eggs and lightly froth whites.
- Stir in shredded lettuce, onions and broken egg shells.
- Stir this mixture into the stock and bring the stock to a simmer.
- Simmer for about 1/2 hour and ladle out the stock through a strainer lined with cheese cloth.
- Taste consomme, correct seasoning and serve hot or cold.
