Stock Clarification Technique

Procedure to render stock or consomme crystal clear.

Ingredients

  • 3 Lightly beaten egg whites and broken egg shells
  • 1 1/2 cups Shredded lettuce
  • 2 Green onions, finely chopped

Instructions

  1. Separate eggs and lightly froth whites.
  2. Stir in shredded lettuce, onions and broken egg shells.
  3. Stir this mixture into the stock and bring the stock to a simmer.
  4. Simmer for about 1/2 hour and ladle out the stock through a strainer lined with cheese cloth.
  5. Taste consomme, correct seasoning and serve hot or cold.
