Apples and Ginger Caramelization

Serve with broiled or pan-seared fish and Apple-scented beurre blanc sauce.
Ingredients

- 1/4 cup Brown sugar
- 1 tablespoon White wine vinegar *
- 1 tablespoon Butter
- 1 Quarter apple per serving, cut into 4 slices with skin on
- 1 tablespoon Fresh ginger cut into 1" julienne strips
Instructions
- Combine brown sugar, vinegar and butter in a small heavy skillet.
- Heat over a low heat until hot and syrupy.
- Add prepared apple slices and julienne of ginger.
- Cook for 2-5 minutes constantly stirring until apples and ginger are cooked and covered with caramel.
- Remove pan from heat, but leave apples and ginger in the pan and keep in a warm place until ready to serve.
To serve:
Arrange pan-seared salmon on individual plates or serving platter, cover with apple-scented beurre blanc sauce garnish with caramelized apples and ginger.
