Green and mean (not really) adjust the peppers to your taste.
Ingredients

- 1 1/2 pounds Tomatillos
- 1/2 White onion
- 4 Serrano peppers
- 3 Cloves garlic
- 1/2 Bunch cilantro
- 3/4 teaspoon Oregano *
- Salt to taste *
Instructions
- Peel tomatillos and wash thoroughly.
- Cover tomatillos with water in a large saucepan and simmer about 5 to 10 minutes.
- Allow to cool about 20 minutes.
- Place everything in a blender and blend until smooth, adding some cooking liquid if necessary.
- If using a food processor, process onion, peppers, garlic and cilantro thoroughly.
- Then add tomatillos and seasonings and process again.
