Chicken Salsa Tortillas

Ingredients

  • 2 Full chicken breasts, boneless & skinless, diced
  • 12 ounces Salsa, homemade
  • 8 ounces Frozen corn
  • 2 ounces Reduced fat cheddar cheese, shredded
  • 8 Flour tortillas

Instructions

  1. Spray fry pan with nonstick vegetable spray.
  2. Cook diced chicken until it looses its pink color.
  3. Drain well.
  4. Add corn and salsa.
  5. Heat thoroughly.
  6. Heat tortillas in oven (wrap in foil and place in 300 degree oven for 5 to 8 minutes). 
  7. Spread mixture on tortillas and top with shredded cheese.
  8. Serve immediately.
