- 2 Full chicken breasts, boneless & skinless, diced
- 12 ounces Salsa, homemade
- 8 ounces Frozen corn
- 2 ounces Reduced fat cheddar cheese, shredded
- 8 Flour tortillas
Instructions
- Spray fry pan with nonstick vegetable spray.
- Cook diced chicken until it looses its pink color.
- Drain well.
- Add corn and salsa.
- Heat thoroughly.
- Heat tortillas in oven (wrap in foil and place in 300 degree oven for 5 to 8 minutes).
- Spread mixture on tortillas and top with shredded cheese.
- Serve immediately.
