All about perfectly fresh oysters!

Ingredients

  • 4 dozen Oysters
  • 1 Tablespoon Fresh Parsley, finely chopped
  • 1 Tablespoon Fresh Chives, finely chopped
  • 1 Tablespoon Fresh Tarragon, finely chopped
  • 8 Shallots, finely chopped
  • 2 Tablespoons Fresh Lemon Juice
  • 1 teaspoon Fine Sea Salt

    Fleur de Sel de Guerande suggested

  • 1/2 teaspoon Fresh Ground Green Peppercorn
  • 4 Tablespoons Extra Virgin Olive Oil

    Gran Cru` - Cassini suggested

Instructions

  1. Open the oysters and remove them from their shell without their juice.
  2. Place them on a serving plate, sprinkle the chopped herbs and shallots over them.
  3. Mix lemon juice with salt and pepper, add extra virgin olive oil, beat well and pour the mixture over the oysters, shallots and herbs.
  4. Marinate in the fridge for 2 hours before serving.
