Ingredients

- 4 dozen Oysters
- 1 Tablespoon Fresh Parsley, finely chopped
- 1 Tablespoon Fresh Chives, finely chopped
- 1 Tablespoon Fresh Tarragon, finely chopped
- 8 Shallots, finely chopped
- 2 Tablespoons Fresh Lemon Juice

1 teaspoon Fine Sea Salt
Fleur de Sel de Guerande suggested
- 1/2 teaspoon Fresh Ground Green Peppercorn

4 Tablespoons Extra Virgin Olive Oil
Gran Cru` - Cassini suggested
Instructions
- Open the oysters and remove them from their shell without their juice.
- Place them on a serving plate, sprinkle the chopped herbs and shallots over them.
- Mix lemon juice with salt and pepper, add extra virgin olive oil, beat well and pour the mixture over the oysters, shallots and herbs.
- Marinate in the fridge for 2 hours before serving.
