Plaice Casserole

Plaice is a name used for a group of flatfish.  Use flounder fillets for this recipe.

Ingredients

  • 12 small Fillet of Plaice
  • Fine Sea Salt, for rubbing *
  • 3 Tablespoons Fresh Lemon Juice
  • 1/2 cup Cheddar Cheese, diced

    Irish Cheddar Cheese suggested

  • 1 Onion, finely chopped
  • 3 Tomatoes, skinned and diced
  • 4 Tablespoons Butter

Instructions

  1. Rub the fillets with salt and lemon juice.
  2. Mix diced cheese, onion and tomatoes together.
  3. Put a little of the mixture on each fillet, then roll them up, secure with a toothpick.
  4. Pack the fillets tightly together in a buttered ovenproof dish.  Moisten with little more lemon juice and dot with butter.
  5. Spread any of the filling mixture left over on top.  Bake in the oven at 350 F for 1/2 hour and serve.
