Plaice is a name used for a group of flatfish. Use flounder fillets for this recipe.
Ingredients

- 12 small Fillet of Plaice
- Fine Sea Salt, for rubbing *
- 3 Tablespoons Fresh Lemon Juice

1/2 cup Cheddar Cheese, diced
Irish Cheddar Cheese suggested
- 1 Onion, finely chopped
- 3 Tomatoes, skinned and diced
- 4 Tablespoons Butter
Instructions
- Rub the fillets with salt and lemon juice.
- Mix diced cheese, onion and tomatoes together.
- Put a little of the mixture on each fillet, then roll them up, secure with a toothpick.
- Pack the fillets tightly together in a buttered ovenproof dish. Moisten with little more lemon juice and dot with butter.
- Spread any of the filling mixture left over on top. Bake in the oven at 350 F for 1/2 hour and serve.
