Mini Beef Pizza

This a great recipe to prepare with children.  They will come up with their own ideas for toppings...guaranteed!

Ingredients

  • 1 Can (28 ounces) chopped tomatoes
  • 1 Tablespoon Dried basil
  • 1/4 teaspoon Black pepper *
  • 1 1/2 pounds beef top round, ground
  • 3 Zucchini, thinly sliced (approximately 1 pound)
  • 6 Cloves Garlic, finely chopped
  • 1/4 cup Grated Parmesan cheese
  • 8 6-inch flour tortillas

Instructions

  1. Heat oven to 450 degrees.
  2. Mix together chopped tomatoes, basil, black pepper and garlic in a bowl for the sauce.
  3. Slice Zucchini.
  4. Place tortillas on baking sheets and bake for 5 minutes.
  5. Brown beef in a non-stick skillet.
  6. Drain off excess fat as it accumulates.
  7. Spread each tortilla with enough sauce to cover.  Divide the meat and squash into 8 equal portions and sprinkle them on top of each tortilla. Finish each with about 1/2 Tablespoon of grated Parmesan.
  8. Bake 10 minutes longer, or until tortillas are slightly brown and bubbly.
