This a great recipe to prepare with children. They will come up with their own ideas for toppings...guaranteed!
Ingredients

- 1 Can (28 ounces) chopped tomatoes
- 1 Tablespoon Dried basil
- 1/4 teaspoon Black pepper *
- 1 1/2 pounds beef top round, ground
- 3 Zucchini, thinly sliced (approximately 1 pound)
- 6 Cloves Garlic, finely chopped
- 1/4 cup Grated Parmesan cheese
- 8 6-inch flour tortillas
Instructions
- Heat oven to 450 degrees.
- Mix together chopped tomatoes, basil, black pepper and garlic in a bowl for the sauce.
- Slice Zucchini.
- Place tortillas on baking sheets and bake for 5 minutes.
- Brown beef in a non-stick skillet.
- Drain off excess fat as it accumulates.
- Spread each tortilla with enough sauce to cover. Divide the meat and squash into 8 equal portions and sprinkle them on top of each tortilla. Finish each with about 1/2 Tablespoon of grated Parmesan.
- Bake 10 minutes longer, or until tortillas are slightly brown and bubbly.
