Irish Mushrooms and Kidney Sandwich

Very popular in the British Isles, but a under appreciated taste in the US.

- 8 large Mushrooms
- 4 Tablespoons Butter, melted
- Fine Sea Salt and Fresh Ground Black Peppercorn, to taste
- 4 Lamb's Kidneys, sliced
- 4 Tablespoons Butter
- 4 pieces Buttered Toast
Instructions
- Brush mushrooms with melted butter, season and grill them.
- In a pan fry kidneys with 2 Tablespoons of butter.
- Lay 4 mushrooms, black side up, on to the toasts.
- Place kidneys slices on top of mushrooms.
- Lay remaining mushrooms over the kidneys, black side down, to make a sandwich. Serve immediately.
