Cream Gravy

Plain old-fashioned white gravy to accompany fried chicken.

Ingredients

  • 3 Tablespoons Drippings from Frying Chicken
  • 3 Tablespoons Flour
  • 3 cups Milk
  • 1/2 teaspoon Pepper
  • Pinch of Salt

Instructions

  1. Pour out all but 3 Tablespoons of drippings from the cooking pan.  Prepare a roux by stirring in 3 Tablespoons of flour.  (Seasoned flour left over from dredging chicken may be used). Cook mixture over low heat, stirring until golden brown.
  2. Meanwhile, heat milk to simmer and whisk hot milk into roux.  Return pan to medium low heat and stir until gravy reaches desired consistency.  Season with salt and pepper and serve.
