Basic favorite corn quick bread.
Ingredients

- 1 cup Unbleached all-purpose flour
- 1 Tablespoon Coarse yellow cornmeal
- 1 teaspoon Sugar
- Ground pepper to taste *
- 1 cup Skim milk
- 1 cup Egg substitute
- 1/2 cup Fresh corn kernels, slightly mashed with a fork
- 1 Tablespoon Snipped fresh chives
- 1 Tablespoon Margarine
Instructions
- Preheat oven to 425 degrees.
- Spray a 1/2 cup popover pan or muffin pan with nonstick vegetable oil.
- In a medium bowl, toss together flour, cornmeal, sugar, and pepper.
- Stir in the remaining ingredients until almost blended.
- Some lumps should remain.
- Pour 1/4 cup batter into each cup and bake until puffed and deep golden, about 25 to 30 minutes.
