Black Eyed Peas "Provencale"

The name is sort of a joke, but the flavor is fantastic.

  • 2 pounds Fresh black-eyed peas
  • 4 cups Chicken stock
  • 1 Medium white onion, chopped
  • 3 Cloves garlic, minced and mashed
  • 2 tablespoons Bacon grease
  • Salt and pepper to taste *
  • Provencale Butter

  1. Wash peas.
  2. Shell mature ones, snap smaller ones.
  3. Combine with stock, onion, garlic, bacon grease and salt and pepper in a soup pot.
  4. Bring to a rapid boil, reduce heat to low, cover, and cook 20 to 30 minutes or until peas are tender.
  5. Serve with a dollop of Provencale Butter.
