These are a favorite in my home, makes a nice snack, or with a cup of coffee or tea a great Breakfast, goes well with honey.

  • 6-7 cups Bran cereal
  • 2 cups Sugar
  • 5 cups Flour
  • 1 teaspoon Salt *
  • 5 teaspoons Baking soda
  • 1 cup Egg substitute
  • 1/2 cup Extra Virgin Olive Oil *
  • 1/2 cup Unsweetened applesauce
  • 1 quart Buttermilk
  • Add raisins or dried apricots if desired.


  1. Use largest mixing bowl.
  2. Mix Bran cereal, sugar, flour, soda, and salt.
  3. Add egg substitute, oil, applesauce, and buttermilk.
  4. Batter will be slightly lumpy.
  5. Store covered in refrigerator, and use as needed.
  6. Do not stir again.
  7. Fill muffin tins 2/3 full and bake 15-20 minutes at 400 degrees.
  8. If you intend to use at once, let stand in bowl for 15 minutes before using.
  9. They will keep in the refrigerator up to 6 weeks.
