Pork with Spinach and Carrots Stir-Fry

Ingredients

  • 1/2 pound Lean pork
  • 2 Carrots
  • 1/2 pound Fresh spinach
  • 1 Scallion stalk
  • 2 teaspoons Cornstarch
  • 2 Tablespoons Water
  • 3 tablespoons Extra Virgin Olive Oil *
  • 1 tablespoon Soy sauce
  • 1/2 teaspoon Fine sea salt *

Instructions

  1. Slice the pork thin against the grain, then cut in strips.
  2. Peel carrots, and cut in strips, then parboil.
  3. Remove tough spinach stems; cut leaves in half.
  4. Mince scallion.
  5. Blend cornstarch and cold water to a paste.
  6. Heat Extra Virgin Olive Oil in a wok pan.
  7. Add scallion and stir-fry until translucent.
  8. Add pork and stir-fry until it begins to brown.
  9. Add carrots and soy sauce.
  10. Stir-fry 1 minute.
  11. Add salt, then spinach, and stir-fry until it begins to soften (about ½ minute).
  12. Then stir in cornstarch paste to thicken.
  13. Serve at once.
