Braised Pork and Spinach

Light and easy pork entree.

  • 3 pounds Pork loin
  • 2 tablespoons Extra Virgin Olive Oil *
  • 1 cup Beef broth
  • 1 tablespoon Brown sugar
  • 4 tablespoons Soy sauce
  • 2 pounds Fresh spinach
  • Crushed juniper berries, (optional) *

    Just a few go a long way.


  1. Heat oil in a large heavy pan.
  2. Add pork and brown quickly on all side.
  3. Pour off most of the fat.
  4. Add beef broth and heat; stir in sugar and soy sauce.
  5. Then simmer, covered, until pork is done (1½ to 2 hours).
  6. Remove meat, leaving gravy in pan.
  7. Let pork cool slightly, then slice.
  8. Set aside. 
  9. Wash spinach, and remove tough stems.
  10. Add to gravy and cook, stirring gently until softened but still bright green.
  11. Drain spinach and transfer to a serving platter.
  12. Arrange pork slices over the top and serve.
