For many generations, Cassini has been a small family business dedicated to the cultivation of olive trees. Right now, the property possesses five hectares with approximately 1000 trees. The altitude of the plots over sea level varies from 150 to 550 meters. The unique variety of olives cultivated is called Taggiasca.
Benedictine monks planted the oldest olive trees in the XIII century. The owner's grandfather and father installed their first traditional mill in 1962. In 1993, a modern mill was installed to improve the quality of olive oil. Production is very limited, because the objective is to always obtain a high-quality product with a superior organic level.
