Marcinase extra virgin olive oils are produced from Ogliarola or Coratina olives grown solely in the Marcinase’s olive-grove. The production process is entirely organic. The family has been producing in the grove since the 1700’s. Their property is located in Molfetta, Puglia, one of the oldest and most traditional areas of oil production in Italy.
The crop is selected and hand-picked from the tree. Olives are pressed within 24 hours using the cold method with a traditional millstone. This method ensures the best quality: very low acidity, peroxides, and unchanged vitamins.
The oil is kept in stainless steel containers, with a device that prevents oil oxidation. The containers are in cold rooms, whose natural temperature is kept constant throughout the year. All Minervini Family oils are packaged in dark glass bottles.
Minervini Family extra virgin olive oil is best used for preparing bruschetta, sauces, lentils and beans, boiled vegetables and dips.
