Apollo Olive Oil’s most decorated olive oil.  Most recently winning Best in Class in both the New York and Los Angeles tasting competitions in 2015.  Named for the famed wind of Provence, Mistral is based on a blend of French varieties of Picholine and Columella along with the delicate Italian Ascolano for good measure. An overall delicate olive oil it is light and floral upfront, with hints of that sweetness you get from fresh cut grass.  Finishing with a slight dry bitterness that are marks of a quality olive oil, with a warm peppery finish that is not over powering.  All in all we can see why this is such an award winning extra virgin olive oil.  Use it to enhance seafood, green salads, mushroom dishes, eggs, and most white wine dishes.  But don’t forget, simply using it with fresh baked bread is a favorite and a must.
