Serves 2

Preparation time: 15 minutes

Source: Vito De Carolis

Rich and impressive... just be careful when igniting the whiskey.

Ingredients

Items indicated with an astrisk (*) available for purchase in the Avanti Savoia store. See below to add these items to your cart.

  • 1 Lobster (about 2 pounds), cooked
  • 5 Tablespoons Butter
  • 1 cup Thin White Sauce (1 Tablespoon butter - 1 Tablespoon all-purpose flour - 1 cup whole milk - pinch of fine sea salt)
  • 4 Tablespoons Irish Whiskey

    (Bushmill's Irish Whiskey suggested)

  • 1/2 cup Heavy Cream

Instructions

  1. Remove and cut up the flesh of the cooked lobster.  In a saucepan toss lobster pieces in the hot butter for 1 minute.
  2. Make the thin white sauce, in a small, heavy saucepan, melt 1 tablespoon of butter over low heat.  Blend 1 tablespoon of flour into the melted butter.  Season with sea salt.  Cook over low heat, stirring, for 4 to 5 minutes.  Slowly add 1 cup of milk, stirring constantly.  Continue cooking slowly until smooth.
  3. Heat whiskey, set alight and pour over lobster pieces.  When the flame dies down, pour enough cream to coat the lobster and then fold in the white sauce.  Serve at once.
