Preparation time: 2 days

Source: Vito De Carolis

Make your own with only five ingredients.

Ingredients

Items indicated with an astrisk (*) available for purchase in the Avanti Savoia store. See below to add these items to your cart.

  • 1 ounce Sugar
  • 1 ounce Dry Yeast
  • 2 1/2 pints Whole Milk, tepid (90ºF)
  • 2 1/2 pints Water, tepid (90ºF)

Instructions

  1. Mix sugar and yeast together.  Gradually add milk and water.
  2. Cover and leave at room temperature for 2 days.
  3. By then, it should have the sharp, pleasant smell of buttermilk.  Strain the buttermilk and use it as usual.
  4. Keep the sponge-like residue that remains in the strainer.  Rinse it thoroughly in tepid water, place in a scalded container, add more tepid milk and tepid water to make more buttermilk.

Note:  Your "buttermilk plant" will go on producing forever, as long as you are careful to strain and wash it about every 5 days.  Also remember to always use water-milk mixture tepid.
