- 1/4 pound Asparagus, per serving
- Wedge of Lemon
- 2 Egg Yolks
- Juice of 1/2 Lemon
- 1 stick Butter/Margarine Blend
- Pinch of Nutmeg *
- Pinch of Cayenne Pepper
Instructions
To prepare asparagus:
- Wash asparagus and snap off the bottom stems where they will break. If skins seem coarse, peel with a vegetable peeler.
- The size of the individual stems affects cooking time. Place prepared asparagus onto a dish and squeeze lemon wedge over it. Cover losely with plastic wrap.
- Cook in microwave 60 to 90 seconds if small. Check any size at about that time to determine doneness.
- Serve with previously prepared blender hollandaise sauce.
For hollandaise:
- Separate eggs and place yolks in a blender or food processor. Reserve whites for another purpose.
- Add lemon juice to egg yolks and blend thoroughly for 2 minutes.
- Over a low flame, melt butter/margarine blend.
- Turn on blender and very slowly at first, dribble in a few drops of hot butter/margarine. As the mixture begins to emulsify, add the remaining butter/margarine in an increasing steady stream until all of it has been used and the sauce has thickened.
- Add pinches of cayenne pepper and nutmeg. If necessary, the hollandaise sauce may be thinned by blending in a little warm water.
