The typical cake of Milan is usually prepared and enjoyed for holidays and special occassions in Italy and has become of the symbol of the city. The creation of this holiday treat is a long one. Several days of proofing the dough gives the cake its distinctive fluffy characteristic. Candied orange and lemon zest and raisins are then added. Serve in slices with a sweet hot beverage (coffee, tea, or hot chocolate) or a sweet wine, such as Asti Moscato. In some regions of Italy, it is served with Crema di Mascarpone, a cream made from mascarpone cheese, eggs, and typically a sweet liqueur such as Amaretto. Or with Zabaglione, a cream made from egg yolk, sugar, and Marsala sweet wine.
The Legend: It was Christmas and the court cook for the Duke of Milan, had no dessert to offer. So the guests were given a sweet bread baked by a mere kitchen boy, named Tony (Antonio), which won exceptional praise. Rather than steal the praise for himself, the cook congratulated his assistant and named it after him Panettone – “pane” a loaf of bread and “tone” (pronounced “tonay”). Panettone is literally the “bread of Tony.”
